Yields 10 people

Ingredients for the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Premix (yields 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Place all the ingredients into a pot, bring to a light boil, agitating until the sugar dissolves. Then, turn off the heat allowing it to cool down fully. Pour into a sealable bottle, close it keeping it chilled, where it will keep for about four weeks.

For the Batch Mix: Combine every spirits and syrup in a big jug, allow it to infuse for 60 minutes, then strain , ideally through muslin, so it's completely strained.

To serve: Measure 85ml of the premix to a stirring glass filled with ice, gently stirring carefully for a minute to cool it down. Strain into a frosted cocktail glass or similar, garnish with a few cranberries adding the final touch using a brief mist of mandarin oil above the glass.
